Cream Cheese Topping Recipe

Ingredients :

250g curd or ricotta cheese

2 tbsp skimmed milk

few drops of vanilla extract

2 tsp lemon juice

1 tbsp caster sugar

Method :
  1. Combine ingredients.
  2. Beat until smooth and creamy.

As an accompaniment - Use as a topping with Dried Fruit Compote.

As an icing - It is also excellent as a low fat icing for Carrot Cake.

To vary - Use the finely grated rind of 1 lemon instead of the lemon juice. Use clear honey instead of sugar and replace the lemon juice with the grated rind of an orange.

To store - Keep covered in the refrigerator for up to 2 days. Do not freeze.

This is a wonderful protein rich topping for fruit based desserts as well as a low fat icing for cakes and muffins.

Serves 4 - 6
