Lemon Syllabub Recipes

Ingredients :

grated rind and juice of 1 lemon

125ml white wine

75g caster sugar

300ml double cream

1 egg white

biscuits, to serve

Method :

Whip the cream until it stands in peaks, then gradually add the wine mixture and continue whipping until it holds its shape. Whisk the egg white until stiff then whisk in the remaining sugar. Carefully fold into the cream mixture. Spoon into 4 glasses and serve with biscuits.
