Ingredients :
1 pineapple, peeled and sliced
6 tbsp mascarpone cheese
2 tbsp rum
2 tbsp fine brown sugar
Heat a griddle pan or hot grill, add the pineapple and cook for 2 minutes on each side.
Mix together the mascarpone, rum and brown sugar.
Serve the griddled pineapple with the mascarpone mixture spooned on top.
