Summer Berry Medley Recipes

Ingredients :

175g redcurrants

175g raspberries

50g caster sugar

30-45ml crème de framboise

450-675g mixed soft summer fruits, such as strawberries, raspberries, blueberries, redcurrants and blackcurrants

vanilla ice cream, to serve

Method :

Stir the redcurrant from their stalks using a fork and place in a bowl with the raspberries, sugar and crème de framboise. Cover and leave to macerate for 1-2 hours. Put this fruit with its macerating juices in a pan and cook gently for 5-6 minutes, stirring occasionally, until the fruit is just tender.

Pour the fruit into a blender or food processor and blend until smooth. Press through a nylon sieve to remove any pips. Leave to cool, then chill. Divide the mixed soft fruit among four individual glass serving dishes and pour over the sauce. Serve with scoops of vanilla ice cream. Make the most of glorious seasonal fruits in this refreshing dessert. The sauce is also good swirled into plain or strawberry flavored fromage frais.
