Quiche Nut Tarts Recipes

Ingredients :

225 g plain flour

1 tsp salt

125 g butter

15 g white cooking fat - vegetable or lard if preferred

25 g salted peanuts, finely chopped

4 tbsp cold water to mix

Filling :

25 g Gruyere cheese, finely grated

25 g walnuts, finely chopped

1/2 tsp onion or garlic salt

150 ml single cream

2 Grade 3 eggs

salt and pepper to taste


Method :
  1. For pastry, sift flour and salt into bowl.
  2. Rub in butter or margarine and cooking fat or lard finely.
  3. Toss in peanuts.
  4. Using a fork, mix to a stiffish pastry with water.
  5. Roll out thinly cut into 18 rounds with a 3" (7.5 cm) cutter.
  6. Use to line 18 bun tins.
  7. Mix together cheese, walnuts and either the onion or garlic salt.
  8. Spoon equal amounts into pastry cases.
  9. Beat cream with eggs.
  10. Season to taste and pour over nut mixture filling each case equally.
  11. Dust with paprika.
  12. Bake until golden and puffy, allowing 15-20 minutes in oven 375F, Gas 5.
  13. Serve hot or warm.

Makes 18

A change from Mama and Papa Quiche, these smaller ones make tempting little snacks which are hard to refuse.
