cheese, rind, cinnamon, egg yolk and sugar in medium bowl. Cut pastry
sheets in half; layer pastry sheets together, coating every second sheet
with cooking oil spray. Cut 24cm round form layered pastry; cut
decorative shapes from pastry scraps, if desired. Place pastry round on
oven tray which has been coated with cooking oil spray; spread cheese
mixture evenly over base, leaving 3cm border. Bake, uncovered, in
moderate oven about 20 minutes or until cheese mixture is set.
Rhubarb Topping over base; decorate with pastry shapes. Bake, uncovered,
in moderate oven about 25 minutes or until firm. Serve dusted with a
little sifted icing sugar, if desired.
Topping - Combine rhubarb, apple, ginger and sugar in large pan, stir
over heat, until sugar dissolves. Cook, uncovered, stirring
occasionally, about 15 minutes or until mixture is thick.
