Bread and Butter Pudding Recipes

Ingredients :

30g (1 oz) butter, softened

6 thin slices day-old bread, crusts removed

3/4 cup (140g / 4.5 oz) mixed dried fruit

1/4 cup (60g / 2 oz) caster sugar

1 tsp mixed spice

2 eggs, lightly beaten

1 tsp vanilla essence

2.5 cups (600ml / 20 fl oz) milk

Method :

Preheat the oven to moderate 180C (350F/Gas 4). Grease a shallow ovenproof dish. Butter the bread and halve diagonally. Layer the bread in the dish, sprinkling each layer with the fruit, sugar and spice. Beat the eggs, vanilla and milk together. Pour over the bread and leave for 5 minutes. Bake the pudding for 40-50 minutes, or until it is set and the top is browned.

Serves 4-6
