Spicy Rhubarb Crumble Recipes

Ingredients :

3 green apples, cored and cut into small pieces

1/4 cup (60g / 2 oz) sugar

410g (13 oz) rhubarb, cut into small pieces

1 tbsp finely chopped glace ginger

Topping:

1 cup (130g / 4.25 oz) natural muesli

60g (2 oz) butter, melted

1/3 cup (75g / 2.5 oz) demerara sugar

1/2 tsp ground cinnamon

1/4 tsp ground cloves

1/4 tsp ground nutmeg

Method :

Preheat the oven to moderate 180C (350F/Gas 4), and lightly grease a shallow 20cm (8 inch) square ovenproof dish. Place the apple in a pan with the sugar and 1/2 cup (125ml / 4 fl oz) water. Slowly bring to the boil, stirring to dissolve the sugar. Reduce the heat and simmer for 5 minutes. Add the rhubarb and ginger, cover and cook for 5 minutes, or until the apple is soft. Spoon into the dish.

To make the topping, combine the ingredients in a bowl. Stir until crumbly and the butter is evenly distributed. Sprinkle the topping over the fruit. Bake for 15-20 minutes, or until the topping is golden and crisp. Serve with cream or ice cream.
