Bibingka - Cake with Cheese and Grated Coconut Recipe
1 tsp vanilla extract (optional)
2 cup flour
2 tsp baking powder
1 tsp salt
1.25 cup coconut milk
3/4 cup sugar
1/4 cup melted butter
3 oz goat cheese, crumbled
2 tsp sugar for garnish
1/3 cup toasted grated coconut for garnish
Preheat oven to
370F. Grease a 9-inch cake pan. In a small bowl, beat eggs and add vanilla
extract if using. Sift together flour, baking powder, and salt. Pour
coconut milk into a large mixing bowl, add sugar, and stir to dissolve.
Beat eggs into coconut milk mixture. With a wooden spoon, fold in flour.
Pour into cake pan and bake for 15 minutes. Quickly drizzle half of melted
butter quickly on cake. Bake 15 minutes. Repeat with the remaining butter.
Bake for 5 minutes more or until a cake tester comes out clean. Remove to
cake rack; after 5 minutes, sprinkle goat cheese on cake, followed by
sugar. Allow cake to cool for another 10 minutes. Gently spread goat
