Muffins Recipe

Ingredients :

250 g

175 g

5 ml

2.5 ml

100 g

5 ml

415 ml

25 g

30 ml

whole meal flour

strong white bread flour

baking powder


brown sugar

bicarbonate of soda



clear honey

Method :

  1. Heat the oven to 220oC (425oF), Gas 7.

  2. Grease 18 deep patty tins.

  3. Sift together the flours, baking powder and salt and add any bran remaining in the sieve.

  4. Stir in the sugar and make a well in the centre.

  5. Dissolve the soda in the milk.

  6. Gently melt the margarine and honey, pour on to the milk mixture and stir well.

  7. Pour on to the dry ingredients and stir to make a smooth batter.

  8. Pour into the tins and bake for 15-20 minutes, until springy to the touch.

  9. Allow to cool slightly in the tins before turning out.

Serving Suggestion :

Serve lightly toasted with thick dried fruit purée and low fat soft cheese.

Makes 18 Muffins
