Wheat Berry Muffins Recipes

Ingredients :

250g whole meal flour

4 tbsp full cream powdered milk

1/2 tsp salt

3 tsp baking powder

125g crushed nuts

125g sultanas

2 eggs

1 cup milk

4 tbsp liquid honey

Method :

Put dry ingredients together in a basin and mix lightly with the edge of a knife. Make a well in the center and add the lightly beaten eggs. Warm the milk and honey until well mixed, then quickly and lightly mix all together.

Spoon into well greased muffin pans, paper cups or patty tins. Bake for the bare 15 minutes, rush them to the morning tea tray and eat out of doors on a sunny morning. Tear them apart with fingers and eschew butter for an eating treat.

Oven - 400F, makes 18
