Basic Pastry Recipes

Ingredients :

2 cups sifted all-purpose flour

1 tsp salt

2/3 cup pure lard or 3/4 cup shortening

1/4 cup ice water

Method :

Measure flour into bowl. Mix in salt with a fork. Add lard or shortening and cut in coarsely with a pastry blender. Sprinkle in water a tablespoonful (15ml) at a time and mix lightly with a fork just until all flour is dampened. Gather dough into a ball with fingers and press together firmly. Use as directed in recipes.

Makes 2 9-inch (23-cm) crusts or 1 double crust
