raisins, 2 cups (500ml) water and sugar in medium saucepan. Set over high
heat and bring to a boil. Turn heat to moderate and cook gently 10
minutes, stirring often. Add butter. Combine 1/2 cup (125ml) water and
flour, stirring until smooth and stir this mixture gradually into the
boiling mixture. Boil 1 minute or until thickened, stirring constantly.
Beat egg yolks lightly and add some of hot liquid from saucepan, a little
at a time, beating constantly. Stir egg yolk mixture into boiling liquid
gradually along with lemon rind, lemon juice and spices. Simmer 1 minute,
stirring. Remove from heat and cool to lukewarm. Pour mixture into baked
pie shell. Sprinkle with lemon. Serve slightly warm or cold.
