Fruity Pumpkin Bars Recipes

Ingredients :

1.5 cups

1/3 cup

1/2 cup

1/2 cup

1/2 tsp



1/4 cup

2 tbsp

1 cup

whole meal self-raising flour

raw sugar

raisins or sultanas

chopped, dried peaches, apricots or apples



butter, melted

buttermilk or soured milk

golden syrup

drained, mashed, cooked pumpkin

Method :
  1. Preheat oven to 190C and grease an 18 x 28cm shallow tin.
  2. In a large bowl, stir together flour, sugar, dried fruits and nutmeg.
  3. Add remaining ingredients and beat with a wooden spoon until well blended.
  4. Pour into prepared tin and bake for 30-35 minutes until top springs back when gently pressed.
  5. Cool and cut into slices to serve.

Makes about 24

For a delicious topping, mix together 300ml sour cream and 1 cup brown sugar. Pour over slice 10 minutes before cooking time is complete. Topping will set as slice cools. Cool in tin before cutting.
