Rocky Road Bars Recipes

Ingredients :


3/4 cup

2/3 cup

butter, softened



plain flour


bicarbonate of soda

chopped pecans or walnuts


cut-up marshmallows

Method :
  1. Preheat oven to 180C and grease an 18 x 28cm shallow tin.
  2. Beat together butter and sugar until light and creamy.
  3. Beat in eggs, one at a time, until blended.
  4. Stir together flour, cocoa and soda.
  5. Gradually stir into creamed mixture until just combined (do not overmix).
  6. Fold in 1/2 cup nuts.
  7. Spread mixture into prepared tin and bake for 45 minutes or until firm to touch.
  8. Sprinkle top with Smarties, marshmallows and remaining nuts; press lightly into cake.
  9. Return to oven for 5 minutes until marshmallows are soft.
  10. Cover completely with foil, cool on a wire rack.
  11. Cut into slices to serve.

Makes 48

Use kitchen scissors dipped in hot water to neatly cut marshmallows.
