Rojak Fruit and Vegetable Salad with Sweet-Tart Dressing Recipe

Ingredients :

Dressing -

1 tsp dried shrimp paste

1 tbsp Chinese rice wine vinegar

1 tsp Chinese chili paste with garlic

1 tbsp sugar

1/2 tsp salt

3 tbsp fresh lime juice

 

Salad -

1 tbsp sesame seeds, toasted

1/4 cup raw peanuts

1 thin, seedless cucumber, peeled and cut into matchsticks

1 ripe guava, peeled, seeded, and cut into bite-sized pieces

1 Asian pear, peeled, seeded, and cut into bite-sized pieces

1 star fruit, sliced crosswise

1 mango, peeled and cubed

1/2 pineapple - not too ripe, peeled, cored and cubed

1 thinly sliced, small red chili, seeded and chopped

3 tbsp fresh lime juice

Method :

Wrap shrimp paste in foil and grill for about 8 minutes, turning once. Dissolve shrimp paste in rice wine vinegar. Stir in Chinese chili paste, sugar, and salt. Set aside.

Spread raw peanuts on a baking sheet and roast in a 325F oven for 10 minutes. Cool and rub off skins. Chop coarsely and set aside.

In a salad bowl, toss fruits and vegetables with lime juice to prevent discoloration. Stir in the shrimp paste dressing and toss well. Sprinkle with the sesame seeds and peanuts and serve at once.

Serves 4-6
