Banana and Ginger Cheese Cake Recipe

Ingredients :

Base :

digestive biscuits, crushed

ground ginger

margarine, melted

 

low fat cottage cheese, sieved

low fat plain yoghurt

clear honey

bananas, mashed

powdered gelatine

 

pieces preserved ginger, sliced

Method :
  1. To make the base, mix together the biscuit crumbs, ginger and margarine.
  2. Press into a greased flan ring on a greased baking tray.
  3. Leave to cool.
  4. To make the filling, beat together the cottage cheese, yoghurt, honey, bananas and lemon juice.
  5. Dissolve the gelatine in 30 ml or 2 tablespoons water in a small basin over a pan of hot water, then stir into the banana mixture.
  6. Pour into the flan case and leave to set.
  7. Decorate with sliced ginger.

Serves 8

Per Serving : 250 Calories, 12 g fat, 3 g fiber.
