spoon chopped candied orange, lemon peel or citron

brandy or dark rum

packed dark-brown sugar

spoon baking powder

spoon baking soda

spoon ground cinnamon

spoon freshly grated nutmeg
1/4 tea
spoon ground allspice
1/4 tea
spoon salt

egg white
1 tea
spoon vanilla extract
Nonstick cooking spray

Method :
- Preheat oven to 325 degrees F.
- Combine dried fruit and candied orange/
lemon peel/ citron with brandy or rum; set aside for 15 minutes.
- Combine flour, sugars, baking powder,
baking soda, cinnamon, nutmeg, allspice and salt.
- In another bowl, whisk together eggs, egg
white and vanilla; add to flour mixture and mix until almost smooth.
- Stir in fruit and brandy.
- Working on a floured surface, shape dough
into three logs, each about 14 inches long and 1.5 inches think.
- Place dough logs on a baking sheet sprayed
with nonstick cooking spray; bake 25-30 minutes or until firm to the
touch.
- Transfer to a rack to cool, then cut
diagonally into half-inch slices.
- Reduce oven temperature to 300 degrees F.
- Stand biscotti slices upright on the baking
sheet; bake another 50-60 minutes or until light golden
- Let cool before storing
