Fruitcake Biscotti Recipe

Ingredients :

1.5 cups mixed dried fruit, chopped

3 table spoon chopped candied orange, lemon peel or citron

1/4 cup brandy or dark rum

2 cups all-purpose white flour

2/3 cup packed dark-brown sugar

1/4 cup sugar

1 tea spoon baking powder

1/2 tea spoon baking soda

3/4 tea spoon ground cinnamon

1/2 tea spoon freshly grated nutmeg

1/4 tea spoon ground allspice

1/4 tea spoon salt

2 large eggs

1 large egg white

1 tea spoon vanilla extract

Nonstick cooking spray

Method :

  1. Preheat oven to 325 degrees F.
  2. Combine dried fruit and candied orange/ lemon peel/ citron with brandy or rum; set aside for 15 minutes.
  3. Combine flour, sugars, baking powder, baking soda, cinnamon, nutmeg, allspice and salt.
  4. In another bowl, whisk together eggs, egg white and vanilla; add to flour mixture and mix until almost smooth.
  5. Stir in fruit and brandy.
  6. Working on a floured surface, shape dough into three logs, each about 14 inches long and 1.5 inches think.
  7. Place dough logs on a baking sheet sprayed with nonstick cooking spray; bake 25-30 minutes or until firm to the touch.
  8. Transfer to a rack to cool, then cut diagonally into half-inch slices.
  9. Reduce oven temperature to 300 degrees F.
  10. Stand biscotti slices upright on the baking sheet; bake another 50-60 minutes or until light golden
  11. Let cool before storing
