Pumpkin Cake Recipe

Ingredients :

small pumpkin

rice flour

shallots, sliced thinly

dried shrimps, soaked and pounded slightly

oil

salt

Method :
  1. Skin the pumpkin and cut into wedges.
  2. Boil the wedges until well cooked through.
  3. Mash.
  4. Set aside to cool.
  5. Sieve the rice flour into the pumpkin mash.
  6. Mix well to a consistency like that of mashed potatoes.
  7. In a frying pan, heat the oil and fry the shallots lightly.
  8. Add in the shrimps and continue to fry for a couple more minutes and then put in the salt.
  9. Drain away half the oil and stir the mixture into the pumpkin mash.
  10. Grease a medium sized baking tin and pour in the pumpkin mixture.
  11. Steam for about 45 minutes to an hour depending on the size and content of the baking tin.
  12. Allow to cool before cutting into squares.
  13. Serve hot or cold with golden syrup.
