Apple and Sultana Filling Recipe

Ingredients :

4 apples, peeled, cored and sliced

2 tsp sultanas

1/2 tsp ground cinnamon

4 cloves

60ml water

2 tbsp soft brown sugar

To serve :

8-12 pancakes or crêpes

ground cinnamon - garnish

Method :
  1. Place all the filling ingredients in a saucepan.

  2. Cover and simmer for 10 minutes, or until apple is soft, but not mushy.

  3. Remove cloves.

  4. Fill and roll up the crêpes or pancakes or, if using crêpes, fill and fold in four, to make triangles.

  5. Place the filled crêpes or pancakes, side by side, in a baking dish.

  6. Bake in a preheated oven for 10 minutes.

  7. Serve hot, dusted with ground cinnamon.

  8. You can prepare the dessert in advance up to Step 4.

  9. Fill and reheat just before serving.

To store - The prepared filling will keep well for up to 3 days in the refrigerator.
