Mini Icy Mooncake with Grape Juice Skin Recipes

Ingredients :

130g fried glutinous rice flour

40g cool whip

60ml grape juice

40g icing sugar (dissolved in 130g water)

Method :

Divide filling into 20 equal portions. Blend fried glutinous rice flour, sugar solution and grape juice in a blender. Then add cool whip and keep on blending until smooth. Knead into a long roll and leave it for 1-2 hours. Divide the dough into 20 equal portions. Stuff in the filling in each piece. Press into a mini mooncake mould and then unmould it by tapping the mould. Refrigerate and serve.

Tips : Kneaded dough should be covered in damp cloth and left to relax. The impression of the mould would be clearer this way.
