Red Bean Sweet Soup with Ginkgo and Sago Recipes

Ingredients :

150g red beans

1/2 packet of fresh ginkgoes

3 tbsp large sago

19g lotus seeds

188g cane sugar

8 cups or suitable amount of water

Method :

Remove dirt and bad beans from the red beans. Wash and soak in water for 3 hours (soaking water should be 2 inches above the red beans). Wash lotus seeds and soak for a while.

Heat half pot of water. Add sago and cook for 5 minutes. Stir with ladle and cover with lid for 30 minutes (repeat this step three times). Pour sago into a strainer. Rinse with cold boiled water until the sago is cool.

Remove stalks from ginkgoes. Cook in hot boiling water for 10 minutes.

Bring 8 cups or suitable amount of water to the boil. Add red beans, soaking water and lotus seeds. Cook for a while. Then turn to low heat. Cook until red beans become tender. Add ginkgoes and sugar. Cook until sugar dissolves. Then add sago and bring the ingredients to the boil. Serve.

Serves 2-4
