Snow Skin Durian Coulis Mooncake Recipe

Ingredients :

600g cooked glutinous rice

160g frozen durian paste

600g water

360g icing sugar

120g shortening

Filling

80g lotus paste

40g fresh durian

Pastry skin (80g)

Method :

Filling

For fresh durian, simply scoop it up with a spoon and try to keep in onto a round shape and then refrigerate it. Use fresh durian flesh and put it onto little mould onto the fridge. This would make it easier to shape later.

Snow Skin Durian Coulis Pastry Skin

Blend in water, flour, lotus paste and durian paste as flavoring. This mixture ought to weight about 80g. A note to durian lovers: don't add too much durian paste for it will be overpowering!

Putting it together

Finally, put in the whole filling onto the durian flavored pastry skin and make sure the outer layer paste covered the filling completely. Put the whole paste onto the mooncake mould. Press it in with just enough strength and you will have your mooncake shaped perfectly.

All mooncakes should weigh as below: The whole mooncake, 200g; Pastry skin, 80g and 120g for filling.
