Steamed Honey Sponge Recipe

Ingredients :

30 g

185 g

honey

butter

sugar

eggs

fresh milk

plain flour

baking powder

Method :
  1. Mix the honey with butter, then blend in a quarter of the sugar.
  2. Beat until light and smooth.
  3. Separate eggs.
  4. Beat the yolks into the butter mixture gradually with remaining sugar.
  5. Beat until smooth.
  6. Add in milk and sift on flour with baking powder.
  7. Fold in.
  8. Leave to stand for 15 minutes.
  9. Whip egg whites until fairly stiff and fold into the mixture.
  10. Line the bottom of a baking tin with grease proof paper and grease lightly.
  11. Line the sides with thin cardboard to aid steam to reach all around the cake evenly.
  12. Pour in the batter and steam over boiling water for 40 minutes.
