Soak sea moss for 1 hour. Rinse, wash and drain well. Wash brown beans. Soak and clean dried tangerine peel. Bring water to the boil. Put in brown beans and dried tangerine
peel. Bring to the boil over high heat.
Then turn on medium heat and cook for
1 hour. Add sea moss and cook for another 1
hour. Season with sugar. Ready to serve.
