Chocolate Peach Puffs Recipes

Ingredients :

75g white or plain dark chocolate, broken into pieces

4 small ripe peaches or nectarines

375g flaky pastry

beaten eggs, to glaze

icing sugar, for dusting

grated chocolate, to decorate (optional)

single cream, to serve

Method :
  1. Grease and lightly dampen a baking sheet.

  2. Put the chocolate in a heatproof bowl over a pan of simmering water and leave until melted.

  3. Halve and stone the peaches, slice very thinly.

  4. Roll out the pastry thinly on a lightly floured surface, cut out four 5 inch rounds using a small bowl or saucer as a guide.

  5. Place the pastry rounds on the baking sheet.

  6. Spoon the melted chocolate on to the pastry, spreading to 1 inch of the edges.

  7. Arrange the peach slices in an overlapping circle over the chocolate.

  8. Make small flutes around the edges of the pastry with the back of a knife.

  9. Brush the pastry with a little beaten egg.

  10. Bake in oven 400F, gar mark 6, 15 minutes until pastry turn golden.

  11. Dust the pastries with icing sugar, place in preheated hot grill for 1-2 minutes, until lightly caramelized.

  12. Decorate with grated chocolate (optional), ready to serve with single cream.
