Christmas Stollen Recipes

Ingredients :

5.5 cups all-purpose flour

1.5 cups low fat milk

1/2 cup white sugar

1/2 cup butter

1/2 raisins

1/2 cup candied citrus peel

1/2 cup candied cherries

2 whole eggs

2 egg yolks

1 ounce active dry yeast

salt/ ground cardamom

icing sugar

Method :

Boil milk, then add sugar, butter and salt. Off fire, cool to lukewarm. Add eggs and mix well, in a food processor, add 3 cups flour and yeast. Add milk mixture to food processor and blend well. Leave dough to rise until double. Add cardamom, raisins, citron and cherries, and the rest of the flour, blend. Take dough out from food processor and knead it gently. Let it rise again in a greased bowl. When risen, cut into 3-4 pieces, roll each into an oval, butter and fold in half lengthwise. Put on greased baking sheet, cover and let rise until double. Bake at 375F for 25 minutes.
