Moist and Rich Christmas Cake Recipe

Ingredients :

225g sultanas

225g currants

225g raisins

115g prunes, stoned and chopped

50g glacé cherries, halved

50g mixed candied citrus peel, chopped

45ml brandy or sherry

225g plain flour

pinch of salt

2.5ml ground cinnamon

2.5ml freshly grated nutmeg

15ml cocoa powder

225g butter

225g soft dark brown sugar

4 large eggs

finely grated rind of 1 orange or lemon

50g ground almonds

50g chopped almonds

Decoration

60ml apricot jam

25cm round cake board

450g ready made almond paste

450g white fondant icing

225g royal icing

1.5ml ribbon

Method :
  1. Soak the dried fruit in the brandy or sherry overnight.
  2. Grease a 20cm round cake tin and line with a double thickness of greaseproof paper.
  3. Preheat the oven to 160C, Gas 3.
  4. Sift together the flour, salt, spices and cocoa.
  5. Whisk the butter and sugar until fluffy and beat in the eggs.
  6. Mix in the citrus rind, the ground and chopped almonds, dried fruits (with any liquid) and the flour mixture.
  7. Spoon into the tin and level the top.
  8. Bake for 3 hours, or until a fine skewer inserted into the middle comes out clean.
  9. Cool in the tin on a wire rack for 1 hour, then turn out on to the rack, but leave the paper on.
  10. When cold, wrap tightly in foil and store in a cool place.
  11. Warm, the sieve the apricot jam to make a glaze.
  12. Remove the paper from the cake, place it in the center of the cake board and brush with hot apricot glaze.
  13. Cover with a layer of almond paste and then a layer of fondant icing.
  14. Pipe a border around the base with royal icing.
  15. Tie a ribbon around the side.
  16. Decorate with holly and a bell made from the fondant icing trimmings, attached with royal icing.

The cake can be made 4-6 weeks before Christmas. During this time, pierce the cake with a fine needle in several places and spoon over 30-45ml brandy.
