Strawberries in Drambuie Recipe

Ingredients :

500g (1 lb 2 oz) strawberries, hulled and halved

2 tsp vanilla essence

2 tbsp Drambuie

1 tbsp soft brown sugar

mascarpone cheese

mint sprigs

Method :

Place the strawberries, vanilla essence. Drambuie and soft brown sugar in a bowl and mix together well. Cover and refrigerate for 30 minutes, tossing the strawberries once or twice. Spoon the strawberries and liquid into four martini glasses. Top with a dollop of mascarpone and a sprig of mint before serving.
