Apple and Pear Crumble Recipe

Ingredients :

225 g cooking apples, peeled, quartered, cored sliced

225 g dessert pears (cooking ones are too hard), peeled, quartered, cored, sliced

125 - 175 g caster sugar, depending on sourness of fruit

1 tsp cinnamon - optional

1 tbsp lemon juice

Topping :

175 g brown flour

75 g butter or margarine

75 g light brown soft sugar

50 g walnuts, coarsely chopped

1 tsp finely grated lemon peel

Method :

Put sliced fruits into a bowl and toss with sugar, cinnamon and lemon juice. Transfer to a 1.75 liter greased heatproof dish. For crumble, tip flour into a bowl. Rub in butter or margarine finely then toss in sugar, walnuts and lemon peel. Sprinkle thickly over fruit and bake 1/4 hour in oven, 375F, Gas 5. Reduce to 325F, Gas 3 and continue to bake a further 1/2 - 3/4 hour or until fruit is cooked and topping golden brown. Serve warm with cream or custard.

Perfumed with autumnal fruits, this is an extra special crumble with its topping made from brown flour and sugar, walnuts and lemon peel.
