Apple Cobbler Recipes

Ingredients :

Topping

2/3 cup whole wheat pastry flour

2/3 cup quick cooking rolled oats, non instant

1/2 tsp double acting non-aluminium baking powder

1/4 cup frozen apple juice concentrate

2 tbsp canola oil

Filling

4 medium Granny Smith apples, peeled and sliced

1/3 cup raisins

1 1/2 tbsp fresh lemon juice

1/4 cup frozen apple juice concentrate

2 tbsp whole wheat pastry flour

1/2 tsp ground cinnamon

Method :
  1. Preheat the oven to 350F. Lightly oil a glass baking pan 8" square by 2" deep and set aside.

  2. For the topping, combine the flour, oats, and baking powder in a medium mixing bowl. Place the apple juice concentrate and oil in a small  measuring cup, and whisk them together. Pour into the oat flour mixture, and cut in using a pastry blender or fork until crumbly. Set aside.

  3. For the filling, place the apple slices and raisins in a large mixing bowl. Sprinkle with the lemon juice and toss gently.

  4. Place the juice concentrate, flour, and cinnamon in small measuring cup, and beat them together using a wire whisk or a fork until the mixture is very smooth. Pour over the apples and raisins, and toss until the fruit is evenly coated.

  5. Spoon the fruit and any liquid remaining in the bowl into the prepared baking pan. Crumble the reserved topping evenly over the top. Bake for 30 minutes or until the top is golden brown and the apples are fork tender. Serve hot, warm, room temperature, or chilled.

This luscious fruit tart makes your "apple a day" taste especially wonderful. For an extra special dessert, top each serving with a scoop of dairy free vanilla frozen dessert.
