Apple Soufflé Omelette Recipes

This delicious autumn filling is made by sautéing apples until they are slightly caramelized - you could use fresh berry fruits in the summer.

Ingredients :

30ml/ 2 tbsp

15ml/ 1 tbsp

15g/ 1 tbsp

 

For the Filling

1

25g/ 2 tbsp

30ml/ 2 tbsp

45ml/ 3 tbsp

eggs, separated

single cream

caster sugar

butter

icing sugar, for dredging

 

eating apple, peeled, cored and sliced

butter

soft light brown sugar

single cream

Method :
  1. To make the filling, sauté the apple slices in the butter and sugar in a heavy-based pan over a low heat until just tender.

  2. Stir in the cream and keep warm, while making the omelette.

  3. Place the eggs yolks in a bowl with the cream and sugar and beat well.

  4. Whisk the egg whites until stiff, then fold into the yolk mixture using a figure-of-eight motion.

  5. Melt the butter in a large, heavy-based frying pan, pour in the soufflé mixture evenly.

  6. Cook for 1 minute until golden underneath, then place under a hot grill to brown the top.

  7. Slide the omelette on to a plate, add the apple mixture, then fold over.

  8. Sift the icing sugar over thickly, then mark in a criss-cross pattern with a hot metal skewer.

  9. Serve immediately.

Serves 2

When whisking egg whites, make sure that the bowl and whisk are both grease-free and that there is no yolk mixed in.
