Apple Walnut Whirls Recipe

Ingredients :

3 oz butter

2 oz soft brown sugar

4 oz plain flour, sifted

3 oz ground walnuts

chopped walnuts, to decorate

Filling:

1 tbsp apricot jam

1 lb dessert apples, peeled, cored and sliced

1/2 tsp ground cinnamon

8 fl oz double cream, whipped

Method :
  1. Cream the butter and sugar together until light and fluffy.
  2. Stir in the sifted flour and ground walnuts and mix to a firm dough using your hand.
  3. Turn on to a floured surface and knead lightly until smooth.
  4. Roll the dough out thinly; cut out ten 3 inch and ten 2 inch circles.
  5. Place on a greased baking sheet and bake in oven, 350F, gas mark 4, 12-15 minutes, until golden.
  6. Transfer to a wire rack to cool.
  7. To make the filling, put the apricot jam and apples into a saucepan, cover and cook gently 15-20 minutes, until softened.
  8. Add the cinnamon and leave to cool.
  9. Spread the cooled apple mixture over the larger rounds, pipe 2/3 of the cream over the apple and top with the small rounds.
  10. Decorate with the remaining cream and the chopped walnuts.
