Apple Walnut Whirls Recipe

Ingredients : |
3 oz butter
2 oz soft brown sugar
4 oz plain flour, sifted
3 oz ground walnuts
chopped walnuts, to decorate
Filling:
1 tbsp apricot jam
1 lb dessert apples, peeled, cored and
sliced
1/2 tsp ground cinnamon
8 fl oz double cream, whipped |
Method :
- Cream the butter and sugar together
until light and fluffy.
- Stir in the sifted flour and ground
walnuts and mix to a firm dough using your hand.
- Turn on to a floured surface and knead
lightly until smooth.
- Roll the dough out thinly; cut out ten
3 inch and ten 2 inch circles.
- Place on a greased baking sheet and
bake in oven, 350F, gas mark 4, 12-15 minutes, until golden.
- Transfer to a wire rack to cool.
- To make the filling, put the apricot
jam and apples into a saucepan, cover and cook gently 15-20 minutes,
until softened.
- Add the cinnamon and leave to cool.
- Spread the cooled apple mixture over
the larger rounds, pipe 2/3 of the cream over the apple and top with the
small rounds.
- Decorate with the remaining cream and
the chopped walnuts.
