Apricot Creams Recipe

Ingredients :

225 g

150 ml

30 ml

2.5 ml

Garnish :

25 g

dried apricots, soaked

bananas, sliced

low fat plain yoghurt, chilled

single cream

ground cinnamon

 

desiccated coconut, toasted

Method :
  1. Purée the apricots, bananas, yoghurt, cream and cinnamon.
  2. Divide between 4 individual serving glasses and leave to chill.
  3. Sprinkle with the toasted coconut just before serving.

Alternative Suggestion :

Other dried fruits can be used in the same way - dried pears or peaches are particularly good. Add a pinch each of mixed spice and grated nutmeg.

Serves 4

Per Serving : 235 Calories, 6 g fat, 18 g fiber.
