Apricot and Pear Filo Roulade Recipes

Ingredients :

115g ready to eat dried apricots, chopped

30ml apricot preserve

5ml lemon juice

50g soft brown sugar

2 medium sized pears, peeled, cored and chopped

50g ground almonds

30ml slivered almonds

8 sheets filo pastry

25g butter, melted

icing sugar, to dust

Method :

Put the apricots, apricot preserve, lemon juice, brown sugar and pears into a pan and heat gently, stirring, for 5-7 minutes. Remove from the heat and cool. Mix in the ground and flaked almonds. Preheat the oven to 400F, Gas 6. Melt the butter in a pan. Lightly grease a baking sheet. Layer the pastry on the baking sheet, brushing each layer with butter. Spoon the filling down the pastry just to one side of the center and within 2.5cm of each end. Lift the other side of the pastry up by sliding a palette knife underneath.

Fold this pastry over the filling, tucking the edge under. Seal the ends neatly and brush all over with butter again. Bake for 15-20 minutes, until golden. Dust with icing sugar and serve hot with cream or fromage frais. This is very quick ways of making a strudel - normally, very time consuming to do - it tastes delicious all the same !
