Apricot Sizzlers Recipes

rashers back bacon

dried apricots, soaked and drained

button mushrooms

bay leaves

whole meal toast, to serve

Method :
  1. Cut the rind form the bacon.

  2. Cut each rasher in half and 'stretch' it by stroking it firmly along a board, using the back of a knife.

  3. Place an apricot at one end of each bacon piece and roll up to enclose the fruit.

  4. Cut the stalks from the mushrooms.

  5. Thread the bacon rolls, mushrooms and bay leaves on to 4 skewers.

  6. Grill for about 5 minutes under medium heat, turning the skewers frequently.

  7. Serve with hot toast.

Serves 4

You can substitute soaked and pitted prunes for the dried apricots.
