Banana Rum Fritters Recipe

Ingredients :

4 large, ripe bananas

25g sugar

5 tbsp dark rum

oil, deep-frying

Batter:

75g plain flour

pinch of salt

1 tbsp olive oil

2 egg whites

To serve:

vanilla sugar

ground cinnamon

Method :
  1. Peel the bananas and cut them diagonally into slices about 1cm thick.
  2. Place them in a shallow dish and sprinkle with the sugar.
  3. Pour the rum over the top and set aside for 90 minutes, turning from time to time.
  4. Make the batter, sift the flour and salt into a bowl.
  5. Make a well in the centre and gradually mix in the oil and water.
  6. Mix to a smooth batter and leave to stand for 60 minutes.
  7. Just before the batter is needed, beat the egg whites stiffly and then lightly fold them into the batter.
  8. Drain the banana slices and dip them into the batter so that they are completely coated.
  9. Heat oil for deep-frying to 350-375F, or until a cube of bread browns in 30 seconds.
  10. Fry the banana pieces, few at a time, until golden brown on both sides.
  11. Drain on absorbent kitchen paper.
  12. Serve the fritters really hot, sprinkled with vanilla sugar and cinnamon.
