Blackcurrant Tapioca Recipe

Ingredients :

500 g

150 ml

Garnish :

blackcurrants, stripped from stalks

orange juice

tapioca

brown sugar

ground cinnamon

a little brown sugar

Method :
  1. Put the fruit into a pan with the orange juice and cook until the fruit is just tender.
  2. Turn the fruit into a nylon sieve and drain off the juice.
  3. Pour the juice back into the pan, heat to just below boiling point and sprinkle on the tapioca.
  4. Stir well.
  5. Simmer, stirring occasionally, until the tapioca is soft.
  6. Meanwhile, press the fruit through the sieve.
  7. Stir the fruit purée and the sugar into the tapioca, remove the pan from the heat and leave for 5 minutes to cool.
  8. Divide the between 4 individual serving bowls.
  9. Sprinkle with a pinch of cinnamon and a few grains of sugar to decorate.
  10. Serve chilled.
