Method :
- Put the fruit into a pan with the
orange juice and cook until the fruit is just tender.
- Turn the fruit into a nylon sieve and
drain off the juice.
- Pour the juice back into the pan, heat
to just below boiling point and sprinkle on the tapioca.
- Stir well.
- Simmer, stirring occasionally, until
the tapioca is soft.
- Meanwhile, press the fruit through the
sieve.
- Stir the fruit purée and the sugar
into the tapioca, remove the pan from the heat and leave for 5 minutes
to cool.
- Divide the between 4 individual
serving bowls.
- Sprinkle with a pinch of cinnamon and
a few grains of sugar to decorate.
- Serve chilled.
