Using a sharp knife, cut off the top
and bottom of the oranges, then cut away the pith and peel.
Working over a bowl to catch the
juice, cut the segments out of the oranges and squeeze any excess juice
from each one.
Strain the juice into a saucepan, add
the sugar and heat until it has dissolved.
Place the orange flesh in a food
processor or blender and whiz until smooth.
Mix in the juice and pour into ice
cube trays to freeze.
When you serve the granita, first
chill the serving dishes for a short while in the freezer.
To serve, remove the granita ice cubes
from the freezer, put them in the food processor and whiz for 30
seconds, then transfer them to the serving dishes and ready to serve.
