Brie Pears Recipes

Ingredients :

1 tablespoon

150 ml

50 g

2 tablespoons

2 tablespoons

large cooking pears

bay leaf

lemon juice

plain low fat yoghurt

brie

parsley (flat leafed variety if available, chopped)

walnut halves

pepper

spinach leaves, to serve

Method :
  1. Peel the pears, leaving on the stalks.

  2. Scoop out the cores, using a small sharp knife.

  3. Cover the pears with water, add the bay leaf and lemon juice and poach for 15 minutes, or until they are tender.

  4. Drain them, pat dry with kitchen paper and leave to cool.

  5. Liquidize the yoghurt and brie in a blender.

  6. Stir in the parsley and season with pepper.

  7. Line a dish with the spinach leaves.

  8. Arrange the pears to stand upright.

  9. Pour the sauce over them and scatter with the walnuts just before serving.
