Dried Fruit Variety Recipes

Ingredients :

450 g

4 tablespoons

mixed dried fruits - apples rings, apricots, figs, peaches and pears

slivered almonds

juice and thinly pared rind of 1 lemon

a pinch of ground cinnamon

plain low fat yoghurt, to serve

Method :
  • Soak the fruit in water to cover for 2-3 hours, or overnight.

  • Add the lemon juice and rind and cinnamon, bring to the boil, cover and simmer for 45 minutes.

  • Cool, remove the strips of lemon rind and chill.

  • Sprinkle on the almonds and serve with yoghurt.

Serves 4

For still more variety, add 1 orange, peeled and very thinly sliced, to the dried fruit for the last 5 minutes of cooking time.
