Ingredients :
450 g
4 tablespoons
mixed dried fruits - apples rings, apricots, figs, peaches and pears
slivered almonds
juice and thinly pared rind of 1 lemon
a pinch of ground cinnamon
plain low fat yoghurt, to serve
Soak the fruit in water to cover for 2-3 hours, or overnight.
Add the lemon juice and rind and cinnamon, bring to the boil, cover and simmer for 45 minutes.
Cool, remove the strips of lemon rind and chill.
Sprinkle on the almonds and serve with yoghurt.
Serves 4
For still more variety, add 1 orange, peeled and very thinly sliced, to the dried fruit for the last 5 minutes of cooking time.
