Fresh Fruit with Mango Sauce Recipes

large ripe mango, peeled, stoned and chopped

peaches

nectarines

small mango, peeled

plums

pear or 1/2 small melon

wild strawberries (optional)

raspberries

blueberries

rind of 1 unwaxed orange

juice of 3 oranges

caster sugar, to taste

juice of 1 lemon

small mint sprigs, to decorate

Method :
  1. In a food processor fitted with the metal blade, process the large mango until smooth.

  2. Add the orange rind, juice and sugar to taste and process again until very smooth.

  3. Press through a sieve into a bowl and chill the sauce.

  4. Peel the peaches, if liked, then stone and slice the peaches, nectarines, mango and plums.

  5. Quarter the pear and remove the core or peel the melon, and slice thinly.

  6. Place the sliced fruits on a large plate.

  7. Sprinkle with the lemon juice and chill, covered with clear film, for up to 3 hours before serving. (Some fruits may discolor if cut too far ahead of time.)

  8. To serve, arrange the sliced fruits on serving plates, spoon the berries on top, drizzle with a little mango sauce and decorate with mint sprigs.

  9. Serve the remaining sauce separately.
