Fruit and Nuts Pilaf Recipes

Ingredients :

brown short grain rice

chicken stock, boiling

medium onion, sliced

clove garlic crushed

stalks celery, thinly sliced

red pepper, seeded and chopped

green pepper, seeded and chopped

button mushrooms, quartered

cashews, chopped

seedless raisins

sultanas

black grapes, skinned and seeded

salt and pepper

Method :
  1. Fry the rice in 1 tablespoon of the oil for 2-3 minutes over moderate heat, stirring.

  2. Pour on the boiling stock, stir , cover and simmer for 45 minutes.

  3. Fry the onion, garlic, celery, chopped pepper and mushrooms in the remaining oil for 3 minutes, stirring once or twice.

  4. Stir this vegetable mixture into the rice with the nuts, dried fruit and salt and pepper and heat through over low heat.

  5. Just before serving , stir in the black grapes.

  6. Serve with green salad.
