575 ml
mixture of apple and grape juice (use half of each)
2 tsp
gelatine
3 tbsp
cold water
125 g
green grapes, peeled, halved, pips removed
2 rounded
tbsp chopped pistachio nuts or walnuts
Method :
Pour juice into bowl. Tip gelatine into saucepan. Add water. Leave 5 minutes to soften. Stand over a low heat. Stir until melted and completely
transparent. Mix with the juice. Cover and refrigerate about 2
hours or until lightly set. Break up with a fork. Divide grapes equally between 6
glass bowls. Top with equal amounts of the
Fruit Consomme then sprinkle with the chopped pistachios or walnuts.
Serves 6
Note -
Based on a mixture of two fruit juices, this is a
glorious chilled soup cum jelly for hot days, and looks most elegant
garnished with chopped green pistachio nuts or for greater
economy, walnuts. It is also very easy to make, perfect for a busy
hostess.
