Fruity Gazpacho Recipes

Ingredients :

ripe tomatoes, skinned

lemon juice

chicken stock

small onion, finely chopped

piece cucumber, finely chopped

yellow pepper, seeded and cut into matchstick strips

peaches, skinned, stoned and thinly sliced

dessert apple, cored and thinly sliced

blackberries or other soft fruit

chopped parsley

Method :
  1. Liquidize the tomatoes and lemon juice, stir in the stock and season well with salt and pepper.

  2. Stir in the vegetables and fruits, cover and chill for 1 hour to allow the flavors to blend.

  3. Just before serving, stir in the parsley.

  4. Serve with oatcakes.
