150g black
or green seedless grapes, plus 4 sprigs
2 egg

caster sugar

grated rind and juice of 1/2 lemon

skimmed milk soft cheese
45ml clear
honey

Method :
Brush the
sprigs of grapes lightly with egg white and sprinkle with sugar to coat.
Leave to dry. Mix together the lemon rind and juice, cheese, honey, and
brandy. Chop the remaining grapes and stir in. Whisk the egg whites
until stiff enough to hold soft peaks. Fold the whites into the grape
mixture, then spoon into serving glasses. Top with sugar frosted grapes
and serve chilled. Serve this
light dessert soon after it is made - it may begin to separate if you
love it standing too long.
