A quick and easy tasty dessert, this
crumble is good served hot or cold, on its own, or with custard.
Ingredients :
75g/ 3 oz
75g/ 3 oz
75g/ 6 tbsp
50g/ 1/4 cup
2.5ml/ 1/2 tsp
400g/ 14 oz
225g/ 8 oz
30ml/ 2 tbsp
plain whole meal flour
medium oatmeal
butter
light brown sugar
ground cinnamon
peach slices in fruit juice
raspberries
clear honey
sprig of fresh mint, to garnish
Method :
Preheat the oven to 180°C/ 350°F/ Gas
4.
Put the flour and oatmeal in a bowl
and mix together.
Rub in the butter until the mixture
resembles breadcrumbs, then stir in the sugar and cinnamon.
Drain the peach slices and reserve the
juice.
Chop the peach slices to about the
same size as the raspberries.
Arrange the chopped peaches evenly
over the base of an ovenproof dish, then scatter over the
raspberries.
Mix together the reserved peach juice
and honey, pour the mixture over the fruit and stir.
Spoon the crumble mixture over the
fruit, pressing it down lightly.
Bake for about 45 minutes, until
golden brown on top.
Garnish with fresh mint and serve hot
or cold.
Serves 2
For a tasty change, use other combinations
of fruit, such as apples and blackberries, rhubarb and orange, or
strawberries and pineapple. If using all fresh fruit, add a little fruit
juice.
