Peking Apples Recipes

Ingredients :

egg, beaten

plain flour

crisp eating apples

vegetable oil

brown sugar

golden syrup

iced water to set

Method :
  1. In a large bowl, stir egg and 115 ml water into flour to make a thick batter.

  2. Peel, core and thickly slice apples.

  3. Dip each apple slice in batter to evenly coat; allow excess to drain off.

  4. In a work, heat oil until smoking.

  5. Add apple pieces in batches and deep-fry for 3 minutes until golden brown.

  6. Using a slotted spoon, remove to absorbent kitchen paper to drain.

  7. To make syrup, in a small saucepan, gently heat oil, sugar and 2 tablespoons water, stirring until sugar has dissolved.

  8. Simmer for 5 minutes, stirring.

  9. Stir in golden syrup and boil for 5-10 minutes until hard and stringy.

  10. Reduce heat to very low.

  11. Dip each piece of apple into syrup to coat then place in ice cold water for a few seconds to set syrup.

  12. Remove to a serving dish.

  13. Repeat with remaining apple.

Serve immediately
