Persian Melon Recipes

Called Paludeh Garmac, this is a typical Persian dessert using delicious, sweet fresh fruits flavored with rose water and a hint of aromatic mint.

Ingredients :

small melons

strawberries

peaches, peeled and cut into small cubes

bunch of seedless grapes (green or red)

caster sugar

rose water

lemon juice

strawberries and sprigs of mint, to decorate

crushed ice (optional)

Method :
  1. Cut the melons in half and remove the seeds.

  2. Scoop out the flesh with a melon baler, without damaging the skin.

  3. Reserve the melon shells.

  4. Alternatively, scoop out the flesh using a spoon and cut into bite-size pieces.

  5. Reserve four strawberries and slice the others.

  6. Place in a bowl with the melon balls, the peaches, grapes, sugar, rose water and lemon juice.

  7. Pile the fruit into the melon shells and chill in the fridge for 2 hours.

  8. To serve, sprinkle with crushed ice, if liked, decorating each melon with a whole strawberry and a sprig of mint.

Serves 4

If preferred, nectarines and raspberries could replace the peaches and strawberries.
