dried mango or dried apricots, chopped
stoned dates, chopped
ground almonds
round won ton skins
egg white, lightly beaten
icing sugar
grated zest and juice 1 small lemon
strips dried mango and date and mint
sprigs, to decorate

Method :

Place banana, lemon zest and juice,
mango, dates, almonds and cinnamon in a food processor and blend
until smooth.

Divide fruit mixture among won ton
skins, placing it in the centre of each one.

Brush edges of won ton skins with egg
white, fold in half to form crescent shapes and press edges together
to seal.

Bring a wok or large saucepan of water
to the boil.

Place dumplings on a sheet of
non-stick baking parchment in a steamer and place over water.

Cover and steam for 10 minutes or
until soft.

Dust with icing sugar, decorate and
serve.
